Colorful Spring Linguine Salad

Finally it is warm and sunny again and we can sit outside and enjoy the beautiful spring weather.

The summer-like temperatures of the last long weekend invited every nature lover to finally get out the camping chair or picnic blanket to eat in the open air.

And seriously, eating outdoors simply tastes the best.
A pleasant wind blows around our noses and the hunger asks for something light with a good taste.

This week it was really hard to decide, what of all the delicious creations of the last days, should appear first on our blog.

The choice fell on this colorful linguine salad.

And as we enjoy the delights of spring, the twittering of birds, its unique flowers, wild herbs and its bright colors, we also want to offer you a salad with a range of happy colors.

Colorful Spring Linguine Salad

Ingredients:

  • 500g spelt - wholemeal linguine
  • 2 handfuls rocket salad
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/2 cucumber
  • 3 stalks of green spring onions
  • 5 spears of green asparagus
  • 1/2 small red cabbage
  • different sprouts (mung beans, sunflower seeds, cress)

  • hemp seeds

  • for the dressing

  • 1 lime

  • 100 ml Tamari soy sauce
  • 100 ml olive oil
  • 1 pressed clove of garlic
  • a thumb-size piece of ginger, peeled and grated
  • sea salt and pepper for seasoning

Instructions:

  1. Cook the linguine according to package instructions and rinse with cold water.
  2. Cut the cucumber, red cabbage and red and yellow bell pepper into thin slices.
  3. Cut the green spring onions in thin round slices.
  4. Remove the lower end of the green asparagus and cut into 1 cm pieces.
  5. Add all ingredients to the linguine and stir properly.
  6. For the dressing, squeeze the lime and add the juice with the remaining ingredients in a blender or mix with a fork.
  7. Before serving the salad, add the dressing and mix properly.
  8. Sprinkle with hemp seeds.

Notes:

Add some diced watermelon pieces for an exotic touch.
We love the combination of melon and rocket salad - the bitter and sweet taste is just the perfect combination.
