Filled Spelt Pouches with Green Asparagus

The asparagus season is in full swing and we also want to contribute a recipe today.

I am a big fan of fresh green asparagus.

I prefer to eat it raw, so I can just take it with me and always have something crispy and healthy to eat.
Green asparagus don't have to be peeled and they taste excellent in our spelt pouches or a colorful spring salad.

It adds the right bite and, provided with a delicious dressing, it is a real highlight.

From time to time, we also love to eat the traditional type of white German asparagus.
Of course, preferably with potatoes and a delicious vegan sauce hollandaise.

Asparagus have a lot of health benefits to offer.

It is the perfect spring vegetable for people who want to loose weight and also add healthy nutrients, for it is almost free of calories.

Asparagus are rich in vitamins, for example, A, B and E, including much folic acid, chlorophyll, calcium and potassium.
It has a diuretic effect and is an awesome vegetable to rid the body of toxins.

Filled Spelt Pouches with Green Asparagus

Ingredients:

Time refers only to the preparation without letting the dough rise!

  • for the dough
  • 350 g pure wholemeal spelt flour
  • 20 g fresh yeast
  • 250 ml warm water
  • a pinch of sea salt
  • 3 tbsp olive oil
  • dried herbs such as rosemary

  • for the filling

  • 1 avocado
  • a pinch of sea salt and pepper
  • 18 green raw asparagus
  • sprouts
  • 6 red radishes

Instructions:

  1. Dissolve the yeast in warm water.
  2. Mix the flour with the salt and add the yeast water. Mix everything well with a spoon and knead into a dough.
  3. Let the dough rise for an hour.
  4. Give 2 tbsp olive oil to the dough and knead again. Divide the dough into 6 equal parts.
  5. Flatten the 6 parts in round or square patties and place them on a baking sheet with parchment paper.
  6. Sprinkle with the remaining olive oil and herbs as desired. Bake for 20 minutes at 180 degrees.

Drawing

  1. Hollow out the avocado, mash it with a fork and season with salt and pepper.
  2. Cut the spelt pouches (keep one side closed) and fill with some avocado cream.
  3. For each pouch, cut 3 green asparagus in the middle (cut the woody end off) and insert into the pouches.
  4. Fill with sprouts and red radishes as desired.

Notes:

Serve the spelt pouches fresh from the oven.
