Raw Cherry-Cashew Birthday Cake and Minion Bananas

It's been a year again!

Happy birthday to our son!

Last week we all celebrated a wonderful birthday.

Due to the large number of 10 years, we of course wanted to make it a fantastic day.
We tried to find something special to serve.

Something colorful and tasty, but also healthy and suitable for children...?

Since we like to have enough time for our birthday-kid on such a special day, it must be something which can be prepared a day in advance.

So, birthdays in our house are mostly pretty relaxed and everyone can enjoy the day.

And is there also a birthday cake?

Yes, of course, this is simply part of a birthday, isn't it?

This year we decided to go for a delicious raw food cake - which are, by the way, a big hit at our house at the moment. They are healthy, colorful and satisfying.

Well what do you say, doesn't it look yummy?

And to keep up the tradition, we also wanted to serve a fresh and healthy little treat to the children in our son's school class.

On the homepage of Partydelights.co.uk, we found these absolutely brilliant Minion Bananas.

Don't they look gorgeous?
And which child doesn't like to eat bananas?

We have to admit, the preparation for 24 of these bananas took us awhile, but the effort has fully paid off and everyone loved the bananas.

Raw Cherry-Cashew Cake

Raw Cherry-Cashew Cake

Ingredients:

for a Ø 26 cm springform pan

  • for the base
  • 100g walnuts
  • 100g hazelnuts
  • 100g dates
  • 2tbsp cocoa powder
  • 1tsp cinnamon
  • 1tsp cardamom

  • for the cream

  • 150g soaked cashew nuts
  • 200g cashew butter
  • 2tbsp flea seed husks
  • 3tbsp maple syrup
  • 200 g frozen cherries

  • for the chocolate

  • 80g cocoa butter
  • 80g cashew butter (unsalted)
  • 30g dark cocoa
  • 30g maple syrup

  • for the topping

  • as you desire - for example: nuts, dried apricots, orange zest, Matcha tea powder

Instructions:

  1. For the base, put all ingredients in a food processor and mix until you have kind of a dough.
  2. Fill it all in a springform pan and press down firmly.
  3. For the cream, put all the ingredients in a blender and mix well. Spread the filling onto the base.
  4. Press the frozen cherries into the dough.
  5. Place the cake in the refrigerator until solid.
  6. For the chocolate, melt the cocoa butter in a water bath and stir in all other ingredients.
  7. Pour the chocolate over the cake and top as you desire.

Notes:

You can also choose other fruits such as strawberries, plums, tangerines or other berries.
