Potato Roasters with Mushrooms

Taste is a matter of choice.

One is a gourmet and loves the exquisite culinary variety, the other praises the typical German three-component food and the next, in turn, finds his pleasure in the sweetness of spices.

Anyway - food is and will remain a matter of taste and that's a good thing.

Wouldn't it be boring, if everyone liked the same?

We probably would hardly come to new ideas and challenges.

Do you know that, too?

"I do not like baked potatoes"
"I do not like normal cooked potatoes"
"and I do not like potato casserole and no fried potatoes ..."

... and all the other fancy things you can make with potatoes.

Usually, our three kids are good eaters. They are not picky and eat almost anything that is served on the table, but when it comes to potatoes, the spirits are parting.

All of them like potatoes, but in different preparation methods.

Sometimes, as a chef in the house, you are really challenged to think more deeply, stay creative and try different things.
Perfect for me. I love creativity and variety on the table.

However, in everyday life it's sometimes practical to cook the same for the whole family - simply to save time.

Fortunately, we still have three potato dishes that everyone likes - mashed potatoes, boiled potatoes with linseed oil and these potato roasters here.

It's a simple and quick dish without too many frills.

If you have children, they may prefer the sweet version with apple sauce.
Since we all like mushrooms, we are having this hearty version today.

So, stay creative, follow your heart and enjoy what you do.

Potato Roasters with Mushrooms

Potato Roasters with Mushrooms

Ingredients:

  • 1 kg of potatoes
  • 150g potato starch
  • salt and pepper to taste

  • 1 onion

  • 600g mushrooms
  • coconut oil

Instructions:

  1. Peel and grate the potatoes, add potato starch and spices and stir well. Let it sit for a few minutes and drain the excess potato water.
  2. Depending on the pan, heat some coconut oil and spread the roaster evenly in the whole pan, fry well from both sides.
  3. While the roasters are in the pan, chop the onion and mushrooms, heat some coconut oil in another pan and sauté well.
  4. Place the roasters on plates and top with the mushrooms.

Notes:

We added our favorite homemade tomato sauce.
