Banana Ice Cream Popsicles

Hot sunny summer days simply call for ice cream.

Today we have one of our favorite very simple and quick ice cream recipes for you.

Quick because, we are enjoying the summer holidays in family and want to spend as much time as we can outside in nature.

Are you into a holiday mood already?

Let's quickly prepare a delicious ice cream and then get yourself outside in the sun.

Usually based of dairy products, our ice cream only consists of healthy ingredients.

Here we use frozen bananas with a simple self-made chocolate coating.

Enjoy our quick and yummy treat on a warm day like today.

Banana Ice Cream Popsicles

Banana Ice Cream Popsicles

Ingredients:

Time refers to the pure preparation time without freezing the bananas.

  • 4 ripe bananas
  • 8 popsickle sticks

  • for the chocolate coating

  • 150g cocoa butter

  • 2 tablespoons dark cocoa
  • 20ml maple syrup (optional)

  • for the topping

  • Nuts, goji berries, grated orange peel, coconut flakes

Instructions:

  1. Cut the bananas in half and stick them on popsicle sticks.
  2. Freeze the bananas for at least 2-3 hours or longer.
  3. For the sauce, warm the cocoa butter in a water bath, add the cocoa and the optional sweetener.
    (We prefer the coating without sweetener since the bananas are already sweet enough).
  4. Fill the chocolate sauce in a small but higher glass (the bananas have to fit in it lengthwise).
  5. Take the bananas out of the freezer and dip them into the sauce.
    When the bananas are not completely covered, turn the glass a little or use a spoon).
  6. Now you need to be fast with the topping, because the sauce hardens within seconds.

Notes:

If you do not want to eat all the bananas right away, put them back in the freezer and enjoy whenever you feel like it.

Use the leftover sauce on other desserts or freeze it.
