Coconut-Banana Pancakes for Summiteers

Today, we have one of our fastest recipes for active winter sports enthusiasts.
As already mentioned, we spent our last week in the Tyrolean Alps.

It was a wonderful holiday with lots of exercises and good food.

One bright sunny day we went to the top of the mountains to a ski hut and could literally sit above the clouds.

Only the top of the mountains could be seen and among us a sea of ​​clouds and glistening white slopes.
An unforgettable experience, which we have never seen in all the years that we are going to the mountains already.

As we mostly do self-sufficiency on holidays, we always take a few ingredients, from which we can quickly whip up a delicious meal.

One of these wonderful simple recipes are our pancakes with warm apple slices.

Whether for breakfast, as a main meal or as a dessert - our coconut banana pancakes are the perfect healthy filling food.
It is a warm and heavenly recipe, perfect for the cold season.

The pancakes are gluten-free, sugar - free and are one of our kid's favorites.

Coconut-Banana Pancakes for Summiteers

Ingredients:

  • 300g almond flour
  • 300ml coconut milk with high coconut proportion
  • 2 mashed bananas

  • 3 apples

  • coconut oil for frying

Instructions:

  1. Combine all ingredients, except of the apples, in a bowl and mix together.
  2. Melt the coconut oil in a pan and fry the pancakes.
  3. Peel the apples and cut them into thin slices.
  4. Add some coconut oil to a pan and fry the apple slices for about 3-5 minutes until soft.

Notes:

Sprinkle the apple slices with cinnamon for extra flavor.
