Quinoa Soup - Also the Soup Kaspar will like it!

Do you know the story of the Soup Kaspar?

What do you think - is a Soup Kaspar someone who likes to eat soup or someone who doesn't like soup?

Often the word is falsely used for soup lovers.




Augustus was a chubby lad;

He ate and drank as he was told,
And never let his soup get cold.
But one day, one cold winter's day,
He threw away the spoon and screamed:
"O take the nasty soup away!
I won't have any soup to-day:
I will not, will not eat my soup!
I will not eat it, no!"
(Heinrich Hoffmann)

Heinrich Hoffmann used his little story of the Soup Kaspar as a measure of re-education to show the little boy, what would happen if he refused his food.
We do not want to talk about the tragic end of the story here...

Since our kids like to eat soup, we luckily do not need to worry about such things.

That is why we defy the rainy and cold weather with a warm quinoa soup.
This is exactly what we need today to recharge our batteries and to add a few vitamins to our diet.

We always have a supply of frozen vegetables in the freezer, in case things have to happen in a hurry.
So, you have your food on the table in almost no time.

Ingredients like quinoa make the soup more nutritional and provide you with vital proteins and minerals like iron, magnesium, potassium, zinc, etc.

Quinoa soup

Quinoa soup

Ingredients:

  • 1 onion
  • oil
  • 8 large potatoes
  • 1 bunch swiss chard
  • 1 bag mixed frozen - or fresh vegetables such as carrots, beans, peas, cauliflower
  • 2l water
  • 200g quinoa

Instructions:

  1. Sauté the onion for 3 minutes in a pot with a little oil.
  2. Peel the potatoes and cut them into small pieces.
  3. Wash the swiss chard leaves and cut them into small pieces too.
  4. Add the potatoes and swiss chard to the onion and fill in the water.
  5. After about 10 minutes add the frozen vegetables and the quinoa.
  6. Cook everything for about 20-25 minutes.
