Cheese Sauce without Cheese?

I have been working in the kitchen for some time now and one thing I made is one of our favorite sauces.
Yes, you guessed right - it's a vegan sauce which almost tastes like a cheese sauce.

I think that's probably the most delicious sauce ever.

To the people who would like to give up cheese and are still looking for an adequate substitute - I can assure you, I do not know a better sauce than this.

You absolutely have to try it.

The sauce is also really quickly made and does not stick in the pan like a normal cheese sauce.
And you only need a few ingredients, a mixer or blender and off you go.

It's a perfect dip for Nachos and vegetable sticks, you can serve it as a sauce for Mac and cheese or our raw zucchini noodles or as a fondue sauce.

By the way, we serve it with spelt couscous and spinach today.

I could eat the whole pot alone; if there wouldn't be other eaters standing next to me :).

Vegan cheese sauce

Vegan cheese sauce

Ingredients:

  • 150g peeled potatoes cut into pieces
  • 150g peeled carrots cut into pieces
  • 200g peeled sweet potatoes cut into pieces
  • 200ml water or the cooking water of the carrots and potatoes
  • 80ml olive oil
  • 30g yeast flakes
  • 1 clove of garlic or garlic powder
  • salt
  • other spices to taste

Instructions:

  1. Cook carrots and potatoes/sweet potato until soft.
  2. Put all ingredients in a blender and puree to a sauce.

Notes:

Store the sauce in a glass and keep it in the refrigerator for up to a week.
You can also freeze the sauce in small glasses, so you always have it on stock.
