Crunchy Tarte Flambée Half & Half

Today we made this delicious tarte to lighten up the gray November weekend.

In its original version Tarte flambée comes from Alsace.

They usually serve it with sour cream, onions, bacon, and cheese.

Nowadays you can find countless variations of it - sweet with apples and cinnamon, with mushrooms, au crouton, etc....

But we wanted to try a different version today - easily digestible and healthy.

The choice of words means that only the dough is baked and the topping consists of raw vegetables.

We like raw food.

Even though we love to cook, there is still a large proportion of unprocessed food in our diet.
That doesn't mean we only eat salad, but also raw desserts, smoothies, raw vegan cheese, green juice and raw fermented vegetables.

Therefore, our present tarte recipe is a combination of both, baked - with a crispy whole grain crust and raw - topped with fresh vegetables.

Life is colorful .....
That is what our tarte was supposed to look like.

It's a super easy recipe which you can really enjoy without remorse.
The tarte is almost done in no time and the raw food provides you with valuable vitamins and minerals.

Topped with crunchy walnuts, cashew nuts and edible flowers, it's also a feast for the eyes.

Ingredients:

  • for the dough
  • 250g whole-grain spelt flour
  • 130ml water
  • a pinch of sea salt
  • 2 tbsp olive oil

  • for the avocado cream

  • 1-2 avocados depending on size

  • 1 clove of garlic
  • a pinch of sea salt
  • some lemon juice

  • for the topping

  • 1 zucchini

  • 1 radish
  • 1 red long thin pepper
  • some salad (with flowers)
  • a handful of soaked walnuts and cashews

Instructions:

  1. Combine all ingredients for the dough.
  2. Roll out the dough (very thin) on baking paper and bake for about 15 minutes at 170 degrees.
  3. In the meantime, mash the avocado with a fork and mix with garlic, salt and lemon juice.
  4. For the topping, cut the zucchini and radishes on a vegetable slicer into very small thin strips.
  5. Cut the red pepper into rings. Combine with zucchini and radish and season with salt and pepper.
  6. Spread the avocado cream on the baked dough and top with the vegetables, lettuce, walnuts, cashew nuts and flowers.

Notes:

Be creative with the raw topping of the tarte. You could also use red radishes, freshly grown sprouts, carrots or tomatoes.
