Actually, we had planned our large annual campfire for the weekend.
However, it has been raining all week long and the garden is soaking wet.
So, it called for cosy hours indoors where it's warm and comfortable.

Among other things, this has resulted in all kinds of delicious food.

Sometimes we could spend the whole morning in the kitchen.
But since preparing healthy food is great fun for us, time is relatively secondary.

In return our afternoons are calm and relaxed, everything is finished and we can enjoy the tranquility and feast all the delicious things.

For you, we have a simple and relatively quickly cooked delicious lunch recipe - filled baguettes with a vegan cheese sauce.

We decided on a vegan version and simply replaced the cheese with a dairy-free variant.
And we are pretty much enthusiastic about the sauce.
It tastes perfect on pizza, pasta or as a fondue cheese.

You can cook it in advance and freeze in little glasses.
So you always have some on hand when it has to be quick.

Ingredients:

  • 2 whole grain spelt flour baguettes

  • for the filling

  • inside of the baguette halves

  • 100g humus (homemade or ready bought)
  • 150g tomato sauce with pieces
  • 1 glass of mushrooms
  • water (for the case, the filling is too dry)

  • for the vegan cheese - sauce

  • 2 peeled potatoes cut into pieces

  • 2 peeled carrots cut into pieces
  • 100ml water or cooking water of carrots and potatoes
  • 50ml olive oil
  • 20g yeast flakes
  • half a clove of garlic
  • sea ​​salt

Instructions:

  1. For the cheeses sauce, cook the peeled and chopped potatoes and carrots in water until soft.
  2. Drain the water, add all the ingredients for the sauce to a blender and mix.
  3. Cut the baguettes and scoop out the soft inside.
  4. Mix all ingredients for the stuffing. (Add some water if the mixture is too dry.)
  5. Pour the filling into the four baguette halves.
  6. Top with the sauce.
  7. Bake at 200 degrees for 8-10 minutes in the oven.
  8. Serve with a salad.

Notes:

Too much sauce left?
Pour in little glasses and freeze for the next time.
