Super Green Vitamin-Rich Kale Salad

We admit, we are still quite novices in terms of kale dishes.

Since everybody is talking about kale lately, we also wanted to experiment with this healthy vitamin-rich vegetable.

Meanwhile, the season has started again and the cabbage regularly ends up in our shopping cart now.

As already mentioned, the kale is praised as the "Superfood".

Why is that?

Kale surpasses many of its green colleagues with an improbable healthy composition of vitamins, minerals, antioxidants and fiber.

It is considered a vitamin C bomb and also offers a lot of vitamin A and K and enriches our diet, among others, with potassium, magnesium, iron, zinc and chlorophyll.

Its antioxidant effect strengthens our immune system, activates our natural defenses and protects against inflammation.

In the near future, we will present you some more of our favorite kale dishes.

Today we want to start with a very simple salad version.
This raw version still contains most of its nutrients.

Here's a tip for those in a hurry:

If you are under time pressure, but still want to get all the healthy advantages of kale, simply mix the leaves in a smoothie or juice them for a delicious green breakfast drink.

Kale Salad

Kale Salad

Ingredients:

  • 8 -10 kale leaves
  • 1 handful of pomegranate seeds
  • raisins
  • pumpkin seeds
  • cashew nuts

  • for the dressing

  • lemon juice
  • olive oil

Instructions:

  1. Wash the kale leaves and pluck into small pieces.
  2. Briefly fry the cashew nuts in a pan.
  3. In a large bowl, massage the leaves with the dressing until they are soft.
  4. Mix with the other ingredients.

Notes:

If you like, add some garlic powder for an awesome taste.
