What a glorious late summer weekend we had.

Therefore, today's recipe is as colorful as our garden at this time of year.

Normally our kids like to eat the "sweet version" of waffles with applesauce, but we felt like trying something different today.

Luckily, we also got thumbs up for this combination.

The avocado cream with the potato waffles brought another experience to our taste buds.
We love avocados and eat them a lot.

With its large proportion of vegetable fats and vitamins, avocados are a true blessing for our health.

Ingredients:

  • for the dough
  • 500g boiled and grated potatoes (from previous day)
  • 200g wholemeal spelt flour
  • 1 finely chopped onion
  • sea ​​salt
  • 200ml water or non-dairy milk
  • 1 mashed banana
  • 1 packet of baking powder

  • for the avocado cream

  • 1 avocado
  • some lemon juice
  • a pinch of sea salt
  • pepper

  • salad and pomegranate seeds for garnish

Instructions:

  1. Peel, boil and grate the potatoes the day before.
  2. For the dough - mix the grated potatoes with the remaining ingredients.
  3. Hollow out the avocado, mash the pulp with a fork and stir in a little lemon juice, salt, and pepper.
  4. Fry the waffles in the waffle iron.
  5. Coat a waffle with avocado cream and stack the layers with the cream in between on the plate.
  6. Garnish with pomegranate seeds and lettuce.
