Vegan Panna Cotta

Doesn't it look yummy?

There is hardly a day when I don't try anything new in the kitchen.

That always puts me in a burst of creativity and I can simply switch off and let my thoughts run free.

For our children, I often search for ideas to offer them some healthy goodies.
In the afternoon, we like to sit all together, talk about the day and enjoy a little dessert.

Today we had this delicious dairy and gelatin free Panna Cotta.

It's prepared with Agar Agar, a great alternative to gel liquids.
Agar Agar is extracted from seaweed and unlike gelatin, it is vegan.

Garnish it with seasonal fruit and you have a true eye-catcher.

Vegan Panna Cotta

Ingredients:

Preparation time does not include solidification

  • 400ml oat milk or coconut milk
  • 3 tbsp cashew butter (optional)
  • 1/2 tsp Agar Agar
  • some vanilla / cinnamon
  • some maple syrup
  • fruits and nuts for garnish

For the fruit version, take fruit juice or pureed fruit instead of coconut or oat milk.

Instructions:

  1. Put everything (except fruits and nuts) in a pot and bring to a boil.
  2. Rinse some glasses with cold water and fill in the mixture.
  3. Keep in the fridge for about three hours to let it set.
  4. Before serving, garnish with fruit and nuts of your choice.
