Best Easter No-Bake Carrot Cake - Moist and Easy

Out into nature - oh, I love this time of the year.
The first warm sunrays, the opening of the buds, the first fresh green ... nothing can keep me in the house.

Every year, I can hardly wait to get out my list of gardening projects for the upcoming season.
Therefore, I used the last couple sunny days to build some more raised beds in our backyard.
This has been on my list for a long time already and I'm now more than thrilled that everything is almost ready for planting.
We made plans with the kids what type of fruits and veggies they would like to grow.
Now, we are looking forward to sow the first seeds and reap a rich harvest.

Of course, we also thought of the upcoming Easter days and already made some preparations.

Today, we want to share one of our favourite cake recipes with you.
This 5 ingredients carrot cake is so moist and so easy to make, that you will love it.

Throw all ingredients in the kitchen machine, mix well, cool a little and you are ready to go. But see yourself...

No-Bake Carrot Cake

Ingredients:

for a 18cm cake pan

  • 5 carrots
  • 4 c oats (optional gluten-free & raw)
  • 1 1/4 c dates
  • 1 tsp cinnamon
  • 2 tbsp coconut oil

Instructions:

  1. Cut the carrots in little pieces and mix them in the kitchen machine.
  2. Add the cinnamon, coconut oil and oats and mix again.
  3. Add the pitted dates and mix until it becomes a kind of a dough.
  4. Press the dough in a cake pan and let it sit in the fridge for about two hours.
  5. Sprinkle with oats, serve and enjoy.

Notes:

Serve the cake right from the fridge.
