Veggie Burger with Cheesy Cashew Sauce

Sure you know it too:

The fridge is full, but you don't really know what to make from all the delicious ingredients?

I usually create a meal plan for the upcoming week so that I know what to buy, but sometimes I just want to get up in the morning and make what the family is up to.

I love to experiment with different ingredients and sometimes I just check out what we have by hand and this needs to be transformed into something delicious.

What we haven't had for some time already were burgers.

So, I thought of creating a new Veggie burger version based on good ingredients.

When talking about burgers, one mostly thinks of meat burgers or MC Donalds.
The fact that we do not eat meat in our house, I guess, I do not really need to mention again.

Not consuming meat doesn't mean not being able to eat burgers at all, but to find delicious and way better alternatives.

Here you can see one of many of our burger creations.

The burgers taste really delicious on our homemade carrots-wholemeal-buns .
Garnished with lettuce, tomatoes and onions and some sauce they are totally divine.

If you like, you can simply eat the burgers and dip them in the sauce or serve with humus or guacamole.

As you can see, our little son is very pleased with his food.
In order to bring the kids closer to what they actually eat, we like to play games in letting them guess what their food consists of.

Except for the potatoes, they have guessed all the ingredients, although I rather thought noone finds out about the spinach.

Veggie burger with cashewsauce

Ingredients:

  • for the burgers
  • 5 carrots
  • 5 potatoes
  • 2 tbsp olive oil
  • a pinch of sea salt and some pepper
  • fresh or dried herbs
  • 1 handful of spinach leaves
  • 1 pressed clove of garlic
  • 300g whole grain spelt flour or gluten-free flour of your choice
  • coconut oil for baking

  • for the sauce

  • 150g cashews
  • some freshly pressed garlic or garlic powder
  • a pinch of sea salt
  • 150ml of water

Instructions:

  1. Peel the potatoes and cut them together with the unpeeled carrots into small pieces.
  2. Steam them until fork-tender.
  3. Then drain the water and add the carrots, potatoes and all other ingredients for the burgers to the kitchen machine and mix to a sticky dough. After that add the flour and knead.
  4. Heat coconut oil in a pan and shape dough into small burger with wet hands!
  5. Fry briefly from both sides.
  6. For the sauce, pour all the ingredients into the blender and mix.

Notes:

This is also the perfect cold snack for the lunch box.
