Glazed Heart-Shaped Carrots with Stuffed Potatoes

Next Sunday is Valentine's Day and we thought we already prepare a nice lovely dish for you.

Since it is well-known that love for sure goes through the stomach, what could be better than a delicious meal, which comes right from the heart.

Since the heart is the timeless symbol of love, we thought to shape our carrots exactly like this.

Carrots are our super vegetables number 1.
If you take a peek in our fridge, you would always find a whole compartment full of carrots.

Therefore, we want to give them a special place in our Valentine's Day recipe today.

These little heart-shaped carrots are a lovely eye-catcher.

We combined them with stuffed potatoes, but you can also enjoy them raw or add them for instance to a soup.

Children will definitely love them.

Ingredients:

  • 8 large potatoes
  • 200ml Oat Cuisine (vegan non-dairy cream)
  • 1 tablespoon sesame seeds
  • fresh herbs
  • a pinch of sea salt

  • 8 thick carrots cut in heart shape

Drawing

  • 1 tablespoon maple syrup
  • rosemary
  • coconut oil

Instructions:

  1. Clean the potatoes properly and cook (with peel) for 15 minutes until tender.
  2. Cut off the upper part, peel it and scoop out the inside of the lower potatoe half (don't peel the lower part).
  3. Put the upper peeled part and the inside of the lower halves, oat milk, sesame seeds, salt and spices in a bowl and mix well or blend in a food processor.
  4. Fill the potatoes with the mixture.
  5. Bake the potatoes in the oven for about 15-20 minutes at 180 ° degrees.
  6. In the meantime, melt the coconut oil in a pan and fry the carrot hearts 5-8 minutes until al dente.
  7. Add the tablespoon of maple syrup and rosemary and stir again.
