Topinambur Soup

Winter time is soup time!

Topinambur soup is one of our favorite soups at the moment.
There are never any leftovers in the bowls.

When the cold wind pinches our noses again, we love to eat something warm.

Topinambur soup is just what we need.

Luckily, you can find Topinambur in a lot of stores again.
This is not only on the season, but also because of its health-giving ingredients, the root vegetable experienced a new comeback.

Topinambur is high of fiber, as well as the vitamins A, B1, B2 and minerals such as iron, potassium and calcium.

Unfortunately, the Topinambur in our garden does not produce so many roots yet, so we still have to stick to the store-bought version.
But we hope for a good harvest in the coming years.

Topinambur contains inulin which swells in water.
Therefore, it is often recommended for weight loss, because this will result in a feeling of long satiety.

You can keep Topinambur in the fridge for about a week.
However, using it right away offers you the best and juiciest consistency.

A warm soup in the evening helps in case of indigestion.

We always like to bring some variety in our diet.
Our children love it because of the sweetish nutty flavor.

Topinambur soup

Topinambur soup

  • Servings: 4 small bowls

Ingredients:

  • 1 onion
  • 600g Topinambur
  • 1l vegetable broth or water
  • sea salt
  • freshly ground pepper
  • 3 tablespoons oat cuisine (vegan oat cream)

Instructions:

  1. Peel the onion and Topinambur (if cleaned properly you can also keep the peel on).
  2. Chop the onions and fry in a little oil until transparent.
  3. Cut the Topinambur in smaller pieces, give it to the onion in the pan and fry briefly.
  4. Fill up with vegetable broth or water and cook until soft.
  5. Puree it with the hand blender or in a mixer.
  6. Season the soup with the spices.

Notes:

Give the soup some extra power with some toasted walnuts or hazelnuts.
