Herb Cream Cheese from Cashew Nuts

We hope you had a wonderful first December weekend.
A few snowflakes are dancing through the air already and put us into Christmas mood.

We spent the weekend with visiting our small and cozy Christmas market here in town.
This is an annual highlight for our kids; because there they can personally hand over their wishlist to Santa Claus.

Of course we also spent time in the kitchen and experimented with some of our favorite ingredients.
Today we would like to share our herb cream cheese recipe with you.

The spread is vegan and basically only consists of a few ingredients, such as cashew nuts, water, herbs and some spices.
Try it on our home-baked bread it tastes heavenly.

Our youngest son always wants to take part in the kitchen preparation.
After we were done and set up everything for the pictures, he started stealing the carrot sticks and dipped them into the cream cheese.
It really looked like he was relishing it. :)
Sometimes, we have to be really quick to get everything into the picture.

Ingredients:

Time refers to the normal preparation without soaking the cashews.

  • 100g cashews
  • 50 - 70ml water (depending on desired consistency)
  • fresh herbs such as basil, chive rosemary....
  • some lemon juice
  • pinch of sea salt
  • pepper
  • garlic powder (optional)

Drawing

Instructions:

  1. Soak cashew nuts for two hours.
  2. Combine all ingredients and blend until smooth.

Notes:

The spread tastes also absolutely delicious as a dip for vegetable sticks like carrots, celery or cucumber.

You can also serve it as the German type of Quark (curd cheese) with potatoes and linseed oil.
