Quince Volcano with Chocolate Lava

Our absolute highlight of this autumn is a top-class divine dessert.

Those of you who love to eat healthy, but also enjoy feasting and savoring; should definitely give it a try.

This year's season served us with a delicious pile of golden yellow quinces.
Quinces from the own garden are a true blessing.

We are fortunate to still have one of these beautiful trees in our backyard.

The fruit with its unique smell brings fragrant memories of past fall times into our house.
Every season we pick a bowl of quinces just to enjoy the wonderful smell.

Already Hildegard von Bingen knew about the healing effect of this delicious fruit.
She recommended it for gout and rheumatism problems.

And on top of this, it provides us with a lot of iron, vitamin C and a high content of fiber.

This year we did not only want to process the quinces into puree or bread; but we wanted to come up with something special for the past weekend.

A combination of fruit and chocolate.

The core of our quince volcano consists of a delicious chocolate mousse and the lava of a chocolatey cashew-sauce.
Of course, the volcanic rocks on the basis of nuts cannot be missed.

How do you find this chocolate seduction of a special kind?

Actually, it would be the perfect dessert for a Christmas meal. But until then it still takes a while and I'm sure there will be tons of new ideas in our heads.

With this, I also want to praise the creative gang of my four men in the house.
Without you, the flavorful creations would not be what they are, the names of the dishes would be unimaginative, the photos probably not as good and without your appetite, it would be much less funny 😀.

Quince volcano

Ingredients:

  • 4 quinces
  • different soaked nuts (almonds, cashews, walnuts) for the topping

  • for the chocolate mousse
    Here you can find the recipe for the best chocolate pudding in the world, which we used as a filling.

  • 1 ripe avocado

  • 2-3 ripe bananas
  • 1tbsp of maple syrup
  • 5tsp of cocoa powder

  • for the cashew-sauce

  • 50g cashews
  • some water
  • Sweetener of choice

  • for the chocolate sauce
    You can either melt vegan chocolate or you can try our homemade chocolate.

  • 40g cocoa butter
  • 40g cashew butter
  • 15g dark cocoa
  • 15g maple syrup
  • a small pinch of salt

Instructions:

  1. Wash the quinces, wipe off the furry skin and cut them into 2cm thick slices.
  2. Peel the slice and immediately place it in hot water.
  3. Cook for a few minutes until the slices are soft. (Attention, that can happen very quickly, otherwise, the slices can fall apart)

for the chocolate mousse

  1. Halve the avocado, remove the pit, scoop out the flesh and add along with the banana, the cocoa powder and the sweetener in a blender or food processor and mix until you have a nice chocolate cream.

for the cashew-sauce

  1. Process the cashews in the mixer until you have a flour.
  2. Add some water and a sweetener of your choice and mix again.

for the chocolate sauce

  1. Melt the cocoa butter in a pan and take it off the heat once melted.
  2. Stir in all other ingredients.

  3. Place a quince slice on a plate, fill with chocolate mousse and go on like this to the uppermost layer.

  4. Top the volcano with the nuts and the chocolate and cashew-sauce.
