Vegan Crispy Pizza

Pure sun at the beginning of November.
I can't stop praising the brilliant weather this year.

Isn't it wonderful?

The leaves rustle everywhere, there is bright blue sky as far as you can look and happy children running around.

Well, it may go on like this....

After relaxing hours outside in the fresh air, we let the day comfortably end inside.

From time to time, it becomes still pretty busy in our kitchen, just like today.

Because it's "Happy Pizza Day"!

There are dishes we like to serve on a regular basis.

Pizza is definitely one of it.

Homemade pizza is simply unbeatable in taste and price.
And the best part is, you can top it with all the things of your choice.
Our kids love spinach and mushrooms, but the possibilities are endless.

The pizza is also fast and easily made.
You only have to plan some time for letting the dough rise.

Vegan Crispy Pizza

Vegan Crispy Pizza

Ingredients:

the time refers to the pure preparation without letting the dough rise

  • for the dough

  • 400g pure spelt flour

  • 180ml warm water
  • 20g fresh yeast
  • 3tbsp olive oil
  • sea salt

  • for the tomato sauce

  • 1 onion

  • 1 garlic clove
  • 150g silken tofu (you can also omit the tofu, but it makes the sauce a little thicker and creamier)
  • 1 can of tomatoes with pieces

  • for the topping

  • a choice of spinach, mushrooms, corn, peas...

  • for the vegan cheese sauce

  • 90g cashew nuts

  • 200ml water
  • some lime juice
  • 1 crushed clove of garlic
  • 2 tablespoons nutritional yeast
  • 1 tablespoon locust bean gum
  • sea salt

Instructions:

  1. Dissolve the yeast in the warm water.
  2. Soak the cashews in some water.
  3. Pour the yeast water, olive oil, and salt to the flour and knead everything well.
  4. Let the dough rise for 1 hour.
  5. For the sauce, cut the garlic and the onion into small pieces, add the tomato sauce and the silken tofu and mix in mixer until smooth.
  6. Then prepare the "cheese-sauce". Put all the ingredients in the blender and mix thoroughly until you have a sauce.
  7. Roll out the dough on parchment paper, move it on a baking sheet, sprinkle with the tomato sauce and place the ingredients for the topping on top.
  8. Give the "cheese-sauce" a short boil, so that it thickens slightly. Then pour over the pizza.
  9. Bake the pizza for approximately 20-30 minutes at 180 degrees.
  10. Sprinkle with fresh herbs and serve.
