Apple Muffins - Easy, Juicy, Tasty!

It is apple time again.....

Since the last year's frost destroyed our whole apple harvest with not a single apple left on all of our trees, there will be a big load this year.

Thus, this will bring some more apple recipes on our blog.

These apple muffins are our kids favorite.

They are always eaten within seconds.

We love to bake with apples.
Furthermore, we prefer ingredients that we always have at hand and apples are one of them.

These healthy muffins are made with pureed bananas and wholemeal flour which makes them unforgettably tender.

Apple muffins

Apple muffins

Ingredients:

  • 250g wholemeal spelt flour
  • 80g melted vegan butter or coconut oil
  • 3tsp of ground golden flax seeds soaked in a little water (replaces two eggs)
  • 7g baking powder
  • 2 mashed bananas
  • 3 tbs maple syrup
  • 100ml water
  • 2 large apples

Instructions:

  1. Put all ingredients in a large bowl and mix well.
  2. Cut the apples into small pieces and fold into the batter.
  3. Pour the mixture into 12 muffin cups.
  4. Bake the muffins at 170 degrees for about 30 minutes.

Notes:

You can keep them in the refrigerator for several days.
